Ingredients:
- cookies – 200 g
- strawberry puree – 250 g
- strawberries – to taste
- butter – 85 g
- cream cheese – 500 g
- cream 33% – 500 ml
- powdered sugar – 190 g
- lime – 1 piece
- sugar – 50 g
- corn starch – 1.5 tablespoons

Step 1
In a saucepan, mix the juice and zest of lime, strawberry puree, sugar and starch. Heat over medium heat and, stirring constantly, bring to a thick jam. Cool the finished mixture and put it in the refrigerator for 1 hour.

Step 2
Crumble the cookies with a blender, mix it with melted butter. Lubricate the bottom of the split mold with a diameter of 20 cm with butter or vegetable oil and put a mass of cookies on it. Tamp with the bottom of the glass. Put the mold in the refrigerator.

Beat the cream with a mixer until firm peaks. Remove the whipped cream until they are needed.

Using a mixer, mix the cream cheese with powdered sugar at high speed until the cheese is smooth and creamy.

Add the whipped cream to the cheese mass and mix them with a silicone spatula until smooth,

Put the cheese mass on the cake. Put the strawberry mass on top. Gently mix with a skewer or the tip of a knife to make a marble pattern, trying not to damage the cake.

Put the cheesecake in the freezer for 6 hours. Take the finished cheesecake out of the freezer 1-1.5 hours before serving. When it thaws a little, remove the walls of the detachable mold. Garnish the cheesecake with fresh strawberries and serve.
